Grilling with this oven is straightforward: load charcoal into two vertical chambers, turn on the fan, wait for the thermometer to reach 200–250°C, then place meat in the center of the grate — heat from the two charcoal walls wraps around the meat horizontally, fat drips straight down the center channel without touching the charcoal.

  • Two vertical charcoal chambers on each side — heat wraps horizontally, fat doesn't touch charcoal so acrid smoke is significantly reduced
  • Active air fan — adjust up or down like a gas pedal to maintain 200–250°C on the thermometer
  • Zone 200–250°C: Maillard reaction (from 140°C) creates crispy brown crust and develops umami flavor
  • Each batch 8–10 kg chicken or meat, approximately 60–90 minutes

One standard batch — and why it tastes so good

The same 6-step process the workshop uses, standard across this entire oven line.

1 · Light & Wait for Charcoal Pour starter fluid into the bottom of both vertical charcoal chambers (back chamber full, front chamber 1/2), light it, turn on the fan. In about 15 minutes the charcoal will glow evenly.
2 · Load Batch & Cover Lid When the thermometer reaches 200–250°C, place food in the center of the grate, directly between the two charcoal chambers, cover the lid, flip once every 15–20 minutes.
3 · Adjust Heat with Fan Over 250°C — reduce fan speed. Not hot enough — increase fan speed. No need to stir charcoal or open the lid.
The Science of Great Flavor

From 140°C, the Maillard reaction starts creating a brown crust and umami flavor layer — the oven's thermometer range of 200–250°C sits squarely within this zone. Acrid smoke? Research in Food Chemistry (2016) measured it: keeping fat from dripping onto charcoal reduces PAH4 compounds in grill smoke by 48–89% — exactly what the center channel between the oven's two charcoal chambers does.
